Easy Baked Chicken And Rice (Recipe)

Another super simple meal idea for when you just have no idea what to feed the family. This can be whipped up in an hour and the recipe claims it feeds 4 but of course, that depends on who’s eating it πŸ˜‰

What you’re going to need:

  • 2 pounds chicken pieces or a couple of chicken breasts (I cut mine in half to make them thinner so they cook faster)
  • 1/2 cup oil
  • 1 cup rice, uncooked
  • 2 1/2 cups boiling water
  • 2 cloves garlic, crushed
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 teaspoon turmeric
  • pinch of cayenne
  1. Brown the chicken pieces on all sides in hot oil. Put in a casserole dish.
  2. Sprinkle uncooked rice over and around the chicken.
  3. Mix together the boiling water, garlic, salt, pepper, turmeric and cayenne. Pour over chicken and rice.
  4. Cover and cook in a 350degree oven for about 45 minutes or until chicken is tender and rice is cooked.

And that’s it! My kids like to put a little soya sauce on the rice for a bit more flavor. I like to serve this with oven roasted parmesan snap peas or some green beans.

A Comforting Meal Of Shepherd’s Pie

I have a sick little girl on my hands today so I’m missing work to look after her. It hurts my heart when one of my little humans are sick 😦 I’m having trouble getting her to drink and she has no appetite but she did manage to keep down some pears and I got her some gatorade since the water wasn’t appealing to her. She started the morning in her own bed and then moved to mine and now we’re on the couch. The laundry keeps piling up because she keeps getting sick all over the bedding.

It’s the last day of hunting for my hubby and he was kind enough to take the boys out so us girls could spend the day in quiet solitude. While she napped I managed to get more Christmas baking done. Today I did peanut butter balls and more butter tarts and I’m hoping to get some matrimony cake done as well.

And for supper I thought a Shepherd’s Pie would be yummy. I like mine with mashed cauliflower on top. The first time I tried this I was really surprised at how good it was! I grew up with a very big dislike for cauliflower and I really enjoy it now. I’ve also recently heard this called Cottage Pie. No matter what you call it, it’s one of my favorite comfort meals πŸ™‚

It’s good old fashioned homemade chicken noodle soup for the girl though. Don’t want her getting dehydrated 😦

Chicken Pot Pie

I don’t know about you but when I think of chicken pot pie I think of a table filled with loud laughter and tons of family on a cold wintry night maybe with a fireplace in the dining room lit to warm the house from the cold blizzard happening outside. I used to watch a lot of movies so my thoughts on family meals are a tad off the wall lol. I’m older now and kids have definitely taught me a thing or two about meal times!! Most importantly, they do not happen like that. Still, I like to keep my dreams πŸ˜‰

Here’s my simple recipe for this delicious Classic Chicken Pot Pie.

Classic Chicken Pot Pie

  • 1/3 cup butter
  • 1/3 cup chopped onion
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cup chicken broth
  • 1/2 cup milk
  • 2 1/2 cups cooked chicken
  • 2 cups vegetables
-Prepare 2 pie crusts while melting and heating butter and onion over medium heat.
-Gradually stir in flour, salt and pepper until blended well.
-Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
-Add chicken and veggies, stir into mixture and remove from heat. Spoon into crust lined 9" pie plate. Top with 2nd crust. Cut slits in top crust for ventilation.

Bake at 425 degrees for 30-40 minutes.

Carrot Zucchini Muffins

This has to be the hands down favorite in my house. Super moist and healthier than most muffins. Who doesn’t’ enjoy a good carrot muffin? I just avoid mentioning the “zucchini” part with my kids around!

1 cup rolled oats
2 cups flour
3/4 cup brown sugar
3 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
2/3 cup skim milk
3 Tablespoons oil
1 egg
1 cup finely shredded carrots
1/2 cup shredded zucchini
-Heat oven to 400 and spray your muffin tins well.
-Mix first 6 ingredients in large bowl. Stir in milk, oil and egg all at once, just until flour is moistened.
-Fold in carrots and zucchini, pour into muffin cups.
-Bake 16-21 minutes
-Immediately remove from pans.

These freeze really well so I always make a double batch. That way I can pull a few out at night if needed and the kids have some fresh muffins in the morning πŸ™‚
