
I don’t know about you but when I think of chicken pot pie I think of a table filled with loud laughter and tons of family on a cold wintry night maybe with a fireplace in the dining room lit to warm the house from the cold blizzard happening outside. I used to watch a lot of movies so my thoughts on family meals are a tad off the wall lol. I’m older now and kids have definitely taught me a thing or two about meal times!! Most importantly, they do not happen like that. Still, I like to keep my dreams 😉
Here’s my simple recipe for this delicious Classic Chicken Pot Pie.
Classic Chicken Pot Pie
- 1/3 cup butter
- 1/3 cup chopped onion
- 1/3 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 3/4 cup chicken broth
- 1/2 cup milk
- 2 1/2 cups cooked chicken
- 2 cups vegetables
-Prepare 2 pie crusts while melting and heating butter and onion over medium heat.
-Gradually stir in flour, salt and pepper until blended well.
-Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
-Add chicken and veggies, stir into mixture and remove from heat. Spoon into crust lined 9" pie plate. Top with 2nd crust. Cut slits in top crust for ventilation.
Bake at 425 degrees for 30-40 minutes.

Any pie will do. Shepherd’s pie, cottage pie, tortiere, steak and pepper, chicken pot pie. There is something so comforting about a slice of savoury pie. Hope all is well Angie. Allan
