I can’t believe that May long has just passed! The year is flying by so quickly. Soon the kids will be out of school and the summer holidays will be in full swing. I can’t wait for some fun days at the parks and at the lake. I like to take simple quick breads to the cabin (and also at home) to keep in the freezer for “just in case” days and for those hot days when you just don’t feel like baking but you’re craving something yummy.
I got this recipe from The Happier Homemaker http://thehappierhomemaker.com I’ve used it many times and it’s a favorite among my family as well as many friends! Since it’s also fairly quick and easy, I’ve also used this many times for last minute hostess gifts. Last minute babysitters also enjoy it as a little extra gift for watching the kids š
1/2 cup brown sugar
1 1/2 tsp cinnamonĀ
2/3 cup sugar
1/2 cup butter, softenedĀ
2 eggs
1-2 tsp vanilla
1 1/2 cups flour
1 1/2 tsp b. powder
1/2 cup milk
1 apple peeled and finely chopped
~Preheat oven to 350. Grease a 9×5 loaf pan
~Mix sugar & cinnamon together in small bowl, set aside
~Combine white sugar and butter until smooth
~Add eggs and vanilla and continue to beat on medium until combined
~Add flour & b. powder- then milk
~pour 1/2 batter into pan, cover with 1/2 the apples (pat into batter with back of spoon)
~Sprinkle with 1/2 sugar mixture
~ pour remaining batter, top with the rest of apples and then sugar, pat the topping again into the batter
~Bake for about 50 mins or until toothpick comes out clean when inserted in centerĀ
Cool 10 minutes in pan before moving to rack
