The pickles worked out just fine even though I had my doubts. The recipe wasn’t the one I had originally used and I worried. There wasn’t enough liquid, it wasn’t the same color, and I could feel it wasn’t right. I’m trying to let go a little though so I went with it. I had used all my cucumbers and this just had to work! It was fine in the end, why I let myself get so worked up is beyond me. Actually, no, I do know why. It’s the perfectionist in me, the one I’ve been working on accepting and compromising with for the last few years. She sneaks up out of no where sometimes lol.

I also did carrots which really scared me lol. I’m not sure how they taste yet because I think we need to wait about a week so I’ll keep my fingers crossed that they’ll be edible. The recipe called for 5 pounds of carrots and I had this idea that it would leave me with at least 5 jars of pickled carrots. And I can guarantee you that there some not so lady like words flying around my kitchen lol. Nothing seemed to go smoothly (and really, why would it? It was my first time, nothing ever goes great the first time) and I thought I didn’t have enough jars but in the end it turned out that I only used three and they sealed beautifully and if I had more spices I would practice it again because I’m sure they will be just fine!

Have you done any pickling? I haven’t got into canning much but one day I would like to start. I love being able to save money wherever possible and the thought of growing my own food and preserving it for the winter is almost like magic to me lol

Not much escapes my pickle jars.
Pickled cucumbers, carrots, beets, okra, I even pickle peaches.
This is the same recipe used by my grand mother to pickle peaches. Sooo good.

My friend use to make what was called “ice cream pickles”. Actually it is just the container, an empty ice cream bucket.
It includes cucumbers, cauliflower, carrots. They keep quite a long time in the fridge. You can also put them up in canners.

Yes!! That is what I was trying to do but I didn’t have an ice cream pail and I didn’t have any cauliflower lol I’ve never put carrots in before, but I was going to try it to see if it worked as well. So thank you 😀

I’m sure they will be delicious. There is nothing better than home canning.
I have often wondered if all the processed food we eat is the culprit of some illnesses we see today.
It is just my opinion!

Oh it absolutely is!!!! The additives, the hormones…all the crap is terrible! That’s a topic for another day though haha!
