What did I do for Mother’s Day? I baked a cake that was always enjoyed at my Grandma’s house over many years. I’m missing my mom and my grandma lots this year so I find myself making things that are full of family memories and bring joy to my heart. My kids don’t care for rhubarb and so I call this brown sugar cake when they’re close by š They love it and that’s what counts, I mean, it’s just a name right hahaha
If you’re a rhubarb lover you’re going to want to try this one out!
Step One:
1/2 cup shortening
1 beaten egg
1 1/2 cup sugar
1 tsp vanilla
1 cup milk
Mix these together
Step Two:
1 tsp baking soda
2 cups flour
Mix these together and add to first mixture
Step Three:
Add 2 cups (doesn't have to be exact) of rhubarb and then pour into a greased 9X13 pan.
Step Four:
Add the topping
3/4 cup brown sugar
3 tsp cinnamon
Bake at 350 for 45-50 minutes and voila! You have a delicious rhubarb cake for all to enjoy!

My Grandpa loves to add fresh cream on top of this if he has it handy. My Grandma always loved vanilla ice cream with it. Either way or without, it’s delicious š
Hope you having a beautiful week!
