Chocolate Zucchini Bread

This turns out so soft every time! I found this recipe in some old cookbook a few years ago because I ended up with a whack load of zucchini in my freezer and really didn’t know what to do with it all! I thought I may as well try this out 😀

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 Tablespoon vanilla

Beat these together in a large bowl, then add zucchini. Then…

  • 2 1/2 cups flour
  • 1/2 cup cocoa
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • *you can also add 1/2 teaspoon of instant coffee*

Combine the dry ingredients, add to the zucchini mixture and mix well. Bake at 375 in lightly greased pans for 60-70 minutes.

DELICIOUS!
